Every budget cook needs one pot of something that makes the whole week easier. This is mine. Sweet potatoes go velvety and balance the smoky heat, black beans make it hearty enough that nobody misses meat, and one batch covers two dinners plus lunches — or dinner tonight and three freezer bags of future kindness to yourself.

How to make it
- Build the base. In your biggest pot, soften the diced onion in 2 tbsp oil with a pinch of salt, 6–8 minutes. Add garlic, 2 tbsp chili powder, 1 tbsp cumin, 1 tsp smoked paprika, 1 tsp oregano, and the minced chipotle. Stir one minute — your kitchen now smells like competence.
- Everything in. Add sweet potatoes in ¾-inch cubes, tomatoes, beans (drained), and 2 cups of water. Bring to a simmer.
- Walk away. Partially covered, 30–35 minutes, stirring occasionally, until the sweet potatoes are tender and the chili has thickened. Mash a few potato cubes against the pot to thicken it further.
- Finish bright. Salt to taste and a big squeeze of lime — the lime is not optional; it wakes the whole pot up. Serve with yogurt and cilantro.
Day-two rule: chili is a stew, and stews reward patience. If you can bear it, make this the night before you want it.
Stretch it further
Over 10¢ worth of rice, this becomes ten servings. Spooned into thrift-store mugs with cornbread, it's company food. Leftovers become burrito filling, baked-potato topping, or — my favorite — chili-loaded fries. The freezer bags keep three months, which is to say: they never last three months.
